A Day To Remember

Memorial Day is first and foremost, a day to honor all those who have served our country We don’t know them all but we owe them all. The holiday is especially important this year because remembering those who served on the front lines of conflicts of years gone by or remembering those serving on the front lines today, fighting against a vicious virus, Memorial Day gives us pause. The day is yours to remember and celebrate according to the new normal. Backyard grills will be blazing and on them, your favorite grilled foods, like burgers ribs and hot dogs. Hot dogs are my once-a- year comfort food stuffed with cheese wrapped in bacon and grilled. Trust me, if you love hot dogs, be prepared to crave more than one.

Cheese Stuffed Bacon Wrapped Hot Dogs

Serves 6 (Maybe)
6 all beef hot dogs
12 thick slices sharp cheddar cheese, cut into l strips
12 slices bacon
Toothpicks, soaked in water for about 15minutes
6 toasted hot dog buns

With a small knife cut a lengthwise slit about 3/4 of the way through each hot dog but do not cut all the way through to the ends. Insert two pieces of cheese into the slits, pressing the cheese in tightly. Starting at one end of the hot dog, wrap two strips of bacon around each one overlapping the slices. Use a couple toothpicks to keep bacon anchored in place

Preheat a grill to medium-high heat. Place the hot dogs over indirect heat and grill on one side for about 4 minutes or until bacon is crispy and cooked through. Use tongs to turn the hot dogs on the other side and cook until bacon is crispy. Remove toothpicks and serve hot dogs on the toasted buns with relish, ketchup and mustard if desired.

To bake, place hot dogs on a broiler pan and place in 400F pre-heated oven; bake about 12 to 15 minutes or until bacon is crispy.
