Marching Into Spring

As we march into spring, here are some suggestions for easy and tasty veggie side dishes. Oranges are in season so I use them in many ways. Use the juice from the oranges to flavor winter squash. Dress it up by serving it in orange halves.. Frozen or fresh peas should really never be cooked. I add them at the last minute to whatever seasonings I want to pair them with; in this case it was leeks cooked in a little butter before adding the peas and a splash of leftover white wine to cook off. Sweet and delicious. Do the same thing with zucchini chunks sauteed in olive oil just until they begin to brown then lemon juice and white wine are added to boost flavor. Salt and pepper and a pinch of dried oregano is all that is needed.
