Bellini
Bellini is a popular drink that originated in Venice and is now available bottled all over Italy. Of course when fresh white peaches are available, the result is a heavenly concoction, and you can make it at home quite easily.
INGREDIENTS
White peaches, unpeeled
Prosecco
Chilled 8-ounce glasses
DIRECTIONS
Remove the pits from the peaches and chop them into quarters. Puree in a blender or food processor until you have a smooth puree. Chill the puree in the freezer for about half an hour.
For each drink, pour 1/4 cup of the peach puree into a glass and then add 2/3 cup of well chilled Prosecco. Stir well and serve immediately.
