Chef Tony Ambrose's Fruit Sorbet
SERVES 6 TO 8
INGREDIENTS
3 cups ripe fruit, cut into 1-inch chunks, frozen
1 cup simple syrup
1 tablespoon Spice Mix, your choice of flavor
2 tablespoons herbs, your choice of flavor
DIRECTIONS
Puree the frozen fruit in a food processor at high speed until it is smooth. Add the simple syrup, spice mix, and herb(s) of your choice and mix well.
Chill in the freezer in a stainless steel or ceramic container for at least 4 hours.
Serve with fresh fruit or biscotti.
Note: Simple syrup is made with equal parts granulated sugar and water, boiled for 5 minutes until all the sugar is dissolved.
