Cherry Roll
INGREDIENTS
3/4 Cup Salad Oil
1 Cup Sugar
1/4 Cup warm water ....added
3 eggs
4 3/4 cup King Arthur Unbleached, All-Purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
FILLING
24 ounces pitted prunes
24 ounces (maraschino) cherries, drained
Chopped walnuts (optional)
Dice prunes and cherries add small amount of water and heat through until soft.
Beat together wet ingredients in Kitchen Aid with paddle
3 eggs, add one at a time while beating
Add dry ingredients to wet.
Divide into 4 balls.
DIRECTIONS
Flour board. Roll out to 10 inch by 7 inch oblong about 1/4 inch thick.
Put filling over rolled dough about 1 inch from edges. Roll, tuck ends under. Put onto parchment paper, then onto cookie sheet. Cut slits in top. Brush with melted butter or milk.
Sprinkle with cinnamon sugar.
Bake 350 degrees for 30 - 35 minutes.
