Strawberry Amaretto Sauce
Salsa di Fragole con Amaretto
MAKES 1 CUP
This quick-to-make strawberry sauce can be used over gelato ("ice cream"), semifreddi ("partially frozen desserts"), and rich panna cotta ("cooked cream").
INGREDIENTS
1 pint ripe strawberries, cleaned, stemmed, and cut in half
1/2 cup sugar
4 tablespoons Amaretto liqueur
1 tablespoon orange juice
DIRECTIONS
Place the strawberries and sugar in a saucepan. Stir well and cook over medium heat until the berries begin to soften, then thicken, about 10 minutes, stirring often.
Pour the berry mixture into a sieve over a bowl. With a wooden spoon, press the berries through the sieve, extracting as much juice as possible. Discard the solids.
Add the liqueur and orange juice, and blend well. Let the mixture cool to room temperature.
