We Have A Power Bowl Winner…

Ok, you didn't win the Powerball but the odds are that you could be the next power bowl winner! Power bowls are the latest healthy eating craze and a smart way to start the New Year. Basically it is a bunch of healthy vegetables, grains and some lean protein like fish, chicken, eggs or dairy all nestled neatly together in a sweet little bowl just right for a single serving. Add a favorite dressing or sauce and you have the winning ticket for a healthy intake of nutrients. Power bowls can be assembled with ingredients you already have on hand and with leftovers too. Just get creative, like this suggestion for a sunny Mediterranean power bowl.

Mediterranean Power Bowl

Serves 1

3 to 4 lettuce leaves
½ cup green beans or other veggie leftover
¼ cup diced red bell pepper
½ cup cooked brown rice, quinoa, barley or couscous
¼ pound cooked fish or seafood


Juice and zest of 2 large lemons
4 tablespoons extra virgin olive oil
Salt to taste

Line a single serving bowl with lettuce leaves, add the remaining ingredients in separate piles in the bowl.  

In a separate, bowl whisk the lemon juice, zest, oil and salt together to obtain an emulsion and pour over bowl ingredients
