Yellow Beet Salad

Yellow beets are not only healthy but taste especially scrumptious when tossed in a simple oil, vinegar dressing of, honey, garlic and spring onions.

Ingredients

Dressing

1/3 cup olive oil

3 tbsp rice wine vinegar

2 tbsp  honey

Salt to taste

1/2 tsp dry mustard

1 tsp minced garlic

1/4 cup thinly sliced spring onions

Directions

Roast, boil or microwave 3 to 4 medium size beets until tender.

Cool, peel and cut into rounds. Place in a shallow bowl.

Combine dressing ingredients and whisk together 

Pour over beets and toss gently.

Cover and allow to stand at room temperature for several hours before serving
