Ciril Hitz's Mushroom Filling for Calzones


3 cups dried mushrooms that have been hydrated or fresh wild mushrooms

2 tablespoons unsalted butter

4 tablespoons olive oil

3 cloves garlic, minced

2 teaspoons salt

1/2 teaspoon ground pepper

2 tablespoons fresh chives, chopped

3 shallots

1 package (5.2 ounces) soft herb cheese  (Boursin is preferred)
