Mom's ricotta cheese cookies are a favorite for the feast of Saint Joseph on March 19th. They are soft and perfect with a cup of coffee or tea. Glaze them confectioners sugar or leave them plain.
1 cup butter, softened
2 cups sugar
1 1/2 cups well drained whole milk ricotta cheese
4 cups King Arthur™ Unbleached, All-Purpose Flour
3 1 /2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons vanilla extract
Cream together the butter and sugar. Beat in the eggs one at a time. Beat in the ricotta cheese. Stir in remaining ingredients and mix well. Drop by teaspoonfuls onto ungreased baking sheets.
Bake in a preheated 350 F oven for 12 to 14 minutes or until firm to the touch. Glaze them with confectioners sugar icing.
