Suzi's Apple Cake

Torta di Mele alla Suzanna

Ingredients

DRY MIX

Mix 3 cups chopped apples ( I use almost 4 cups granny smiths because I love

fruit overflowing in pies and cakes)

3 cups sifted King Arthur™ All Purpose Unbleached flour

1 cup coarsely chopped pecans

2 cups sugar

1 tsp. soda

Pinch of salt

2 tsp. cinnamon

WET MIX

1 1/4 cups vegetable oil

2 eggs

2 tsp. Vanilla

Directions

Beat the wet ingredients together then add to the first mixture. Mix until
sticky (and it IS a sticky, stiff, almost alarming concoction that after
all these years I remember Suzi warning me about..."just get it in the pan
and smooth it out"...so she said). I used an 8" x 11" flat Pyrex dish.)

I think I also remember her saying the cake had so much oil in it you don't
have to grease the pan, but of course, I did rub a little margarine in the
pan because I didn't want to take a chance on it sticking for company).

Bake at 350 degrees for 45 minutes to 1 hour. I checked at 45 minutes, but
in the end, left it in for a full hour.

After the cake is completely cooled, sift confectioners sugar and a little
cinnamon on top of the cake.
