Ricotta Cheese with Honey and Almonds

Ricotta con Miele e Mandorle
Serves 4


1/2 cup sliced almonds

1 pound good quality ricotta cheese, well drained

1/2 cup of warm honey


 In a small non-stick sauté pan, toast the almonds until fragrant; set aside.

Divide the cheese among 4 dessert plates.  Drizzle 2 tablespoons of the honey over each and sprinkle the tops with some of the almonds.  Serve.

Variation:  For a more elegant presentation, use 4-ounce cup ramekins.  Line them with plastic wrap allowing for an overhang.  Divide the cheese among the ramekins and be sure to spread it evenly.  Invert each ramekin onto a dessert plate and carefully peel away the plastic wrap.  Drizzle on the honey, sprinkle with the almonds and serve.
