Anything Goes Salad
Nothing beats a healthy, refreshing and vibrant salad that is packed with summer’s best produce. This salad was created in my garden where I picked everything except the corn and turned it into an anything goes salad.
Ingredients
- 1 cup halved cherry tomatoes or equivalent beef steak tomatoes, diced
- 1 cup diced sweet bell pepper
- 1 cup corn off the cob
- 1 cup diced zucchini
- 1/2 cup picked onions (optional)
- 1 cup cooked yellow or green beans
- Handful basil leaves
Directions
- Place all the ingredients in a salad bowl.
- In a separate bowl, whisk together 4 tablespoons extra virgin olive oil, ½ teaspoon dry mustard, 3 tablespoons white balsamic or rice wine vinegar, 1 tablespoon honey, ½ teaspoon salt.
- Pour over salad and toss to combine.
