Anything Goes Salad

Nothing beats a healthy, refreshing and vibrant salad that is packed with summer’s best produce. This salad was created in my garden where I picked everything except the corn and turned it into an anything goes salad.

Ingredients

  • 1 cup halved cherry tomatoes or equivalent beef steak tomatoes, diced
  • 1 cup diced sweet bell pepper
  • 1 cup corn off the cob
  • 1 cup diced zucchini
  • 1/2 cup picked onions (optional)
  • 1 cup cooked yellow or green beans
  • Handful basil leaves

Directions

  1. Place all the ingredients in a salad bowl.
  2. In a separate bowl, whisk together 4 tablespoons extra virgin olive oil, ½ teaspoon dry mustard, 3 tablespoons white balsamic or rice wine vinegar, 1 tablespoon honey, ½ teaspoon salt.
  3. Pour over salad and toss to combine.
