Baci Cookies
These baci or “kisses” cookies are fun to make; the rich dough hides a tasty chocolate kiss!
Ingredients
- 1 cup unsalted butter at room temperature (2 sticks)
- 1.5 cups powdered sugar
- 1 tbsp vanilla extract
- 2 tbsp water
- 2 cups all purpose flour
- 1 tsp salt
- 1 cup walnut halves, finely ground
- Chocolate kisses or baci (Italian chocolate hazelnut candies)
Directions
- Preheat the oven to 325F and line two baking sheets with parchment paper. Set aside
- In a stand mixer or in a large bowl with a hand held mixer, cream the butter and 1/2 cup powdered sugar until light and creamy, beat in vanilla and water. Combine the flour, salt and ground walnuts in a bowl and add to the creamed mixture. Mix until a soft dough forms. Gather up the dough and place in wax paper and chill for at least 1 hour.
- Have candies unwrapped and using about a tablespoon of dough, wrap the dough around the candy to completely enclose it. Place the cookies s you make them on the parchment lined baking sheets. Baker for about 15 minutes or just until the edges start to turn golden brown. Transfer the cookies to a cooling rack and allow them to come to room temperature.
- Sift the remaining cup of sugar in a large bowl and coat the cookies a few at a time in the powdered sugar.
