Breaded Pork Tenderloin Cutlets
Pork is really cheap right now so if you are watching your food budget, consider buying a boneless pork tenderloin. From a single 1-1/4 pound piece make breaded pork cutlets that will serve at least six by cutting the tenderloin into 1/2 inch round slices. Fast and delicious.
Ingredients
- 1 1/4lb boneless pork tenderloin
- 2/3 cup flour
- 2 tsp roasted garlic salt
- 1 tsp black pepper
- 1/2 tsp sweet paprika
- 1 1/2 cups dry breadcrumbs
- 2 eggs
- 3 tbsp pesto sauce
- 1/2 cup sunflower or other oil
Directions
- Pound the cut slices evenly until around 1/4 inch thick Dry the slices with paper towels. Set side.
- In bowl combine the flour, salt, pepper and paprika. Coat each cutlet in the flour mixture shaking off any excess and set aside.
- In a separate bowl add the breadcrumbs
- In another bowl combine the eggs and pesto sauce until smooth; coat each cutlet in the egg mixture and then in the breadcrumbs, pressing the crumbs into the cutlets. Place them in a single layer on a baking sheet and refrigerate for several hours or overnight uncovered.
- When ready to cook, heat the oil in a sauce pan over medium heat and fry the cutlets a few at a time until they are browned on both sides. See as is or with melted butter or your favorite sauce.
