Brown Bread

Give someone a gift from your kitchen like this delicious brown bread that goes with everything from breakfast eggs to steak and beans.

Ingredients

  • 1 cup raisins
  • 1 cup cornmeal
  • 1 1/2 cups wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 2 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 cups buttermilk
  • 1/2 cup molasses
  • 1 egg lightly beaten with a fork

Directions

  1. Preheat oven to 350º F
  2. Grease or spray two 9 x 4 x 4 or two 11 x 4 x 2 inch loaf pans or similar type baking pans.
  3. Place the raisins in a medium bowl and cover with boiling water. Let them soak for 10 minutes. Drain and set aside.
  4. In a large bowl, combine cornmeal, wheat flour, all-purpose flour, sugar, baking powder and salt.
  5. In a separate bowl, whisk baking soda into the buttermilk, then stir in the molasses and egg.
  6. Fold the wet ingredients into the dry ingredients, mixing until just incorporated, then fold in the raisins.
  7. Divide and pour the batter into the loaf pans, filling them 2/3 full. Bake 35-40 minutes or until a cake tester inserted in the center of the loaf comes out clean and the bread is nicely browned.
  8. Transfer to a cooling rack; when cool enough to handle, remove the loaves and allow them to cool completely.
