Brown Bread
Give someone a gift from your kitchen like this delicious brown bread that goes with everything from breakfast eggs to steak and beans.
Ingredients
- 1 cup raisins
- 1 cup cornmeal
- 1 1/2 cups wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 2 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 cups buttermilk
- 1/2 cup molasses
- 1 egg lightly beaten with a fork
Directions
- Preheat oven to 350º F
- Grease or spray two 9 x 4 x 4 or two 11 x 4 x 2 inch loaf pans or similar type baking pans.
- Place the raisins in a medium bowl and cover with boiling water. Let them soak for 10 minutes. Drain and set aside.
- In a large bowl, combine cornmeal, wheat flour, all-purpose flour, sugar, baking powder and salt.
- In a separate bowl, whisk baking soda into the buttermilk, then stir in the molasses and egg.
- Fold the wet ingredients into the dry ingredients, mixing until just incorporated, then fold in the raisins.
- Divide and pour the batter into the loaf pans, filling them 2/3 full. Bake 35-40 minutes or until a cake tester inserted in the center of the loaf comes out clean and the bread is nicely browned.
- Transfer to a cooling rack; when cool enough to handle, remove the loaves and allow them to cool completely.
