Brussels Sprouts Salad
Besides the deliciousness of this winter salad, you will be doing yourself a healthy favor. It goes together in minutes.
Ingredients
- 4 medium size Brussels sprouts, washed and dried, stem end removed and Brussels sprouts shredded
- 1 large Pink Lady apple cut into small chunks (or apple of your choice)
- 1 navel or blood orange, peeled and segmented
- 1/4 cup pomegranate seeds
- 1/2 cup toasted nuts such as hazelnuts
- 1/2 cup vanilla yogurt
- 3 tbsp honey
- salt to taste
Directions
- Place the sprouts, apple, orange and pomegranate seeds in a salad bowl and toss gently. Add the nuts. In a small bowl, whisk together the yogurt, honey and salt. Drizzle over the salad bowl ingredients and toss to combine well.
