Burrata Cheese Salad

Burrata cheese, is the new darling of the cheese world right now. A creamy mozzarella ball with shards of cheese inside with a touch of cream. The best come from Naples, Italy where it is made from buffalo milk. Domestic varieties can be found in supermarkets and imported ones in Italian specialty cheese shops and on line. Burrata is best served fresh like this Caprese salad with the addition of fresh spinach leaves for a new take on the classic recipe.

Ingredients

  • 1 ball burrata cut in half
  • Fresh spinach leaves
  • 1/2 cup cut cherry tomatoes
  • 2tbsp chopped fresh basil leaves
  • 3 tbsp extra virgin olive oil
  • 1/4tsp salt
  • 1tbsp balsamic vinegar plus extra to drizzle on top

Directions

  1. Line two salad dishes with the spinach leaves; place half a ball on top of the spinach.
  2. Add cherry tomatoes around the dish In a small bowl whisk the olive oil, salt and balsamic vinegar together.
  3. Pour over each salad and serve.
