Cantaloupe Salad
Sizzling temps call for cool foods like this refreshing cantaloupe and yogurt salad – it’s so good that it can double as dessert too!
Ingredients
- 1 ripe cantaloupe cut into 4 thick rounds
- 3 cups plain yogurt
- 2 cups diced fresh peaches, nectarines or plums; good with sliced berries too
- 1/2 cup dried cherries
- 1/2 cup whole almonds
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/2 cup honey
- 1/2 cup shredded spinach, sorrel or basil
Directions
- Place the cantaloupe rounds on each of 4 salad plates.
- In a bowl combine, yogurt, diced fruits and almonds, salt and nutmeg. Divide mixture and scoop into center of cantaloupe slices. Drizzle the honey over each plate and top with shredded spinach, sorrel or basil.
