Caprese
Ingredients
- Buffalo mozzarella or fior di latte, cut into small pieces
- Cut in half cherry tomatoes
- Fresh basil leaves, chopped
- Brined olives cut in half (optional)
- Good extra virgin olive oil
- Salt to taste
Directions
- In a small bowl combine the cheese, tomatoes, olive oil, basil and salt. Set aside. Toast or grill the bread and drizzle with olive oil; top with the tomato cheese mixture.
