Caprese

Ingredients

  • Buffalo mozzarella or fior di latte, cut into small pieces
  • Cut in half cherry tomatoes
  • Fresh basil leaves, chopped
  • Brined olives cut in half (optional)
  • Good extra virgin olive oil
  • Salt to taste

Directions

  1. In a small bowl combine the cheese, tomatoes, olive oil, basil and salt. Set aside. Toast or grill the bread and drizzle with olive oil; top with the tomato cheese mixture.
