Corn Soup (Zuppa di Mais)

The vegetables need not be cut uniformly but should be fairly close in size so that they cook evenly. The style of the dice should be paysanne or country style. In other words, they need not be uniform, just roughly the same size. Prepare all ingredients before starting the soup. The actual cooking time is under one hour.
Makes about 6 quarts; serves 10 to 12 as a main course.
