Cocktail Tomato Caprese


  • Serves 6
  • 12 cherry tomatoes, centers hollowed out
  • Salt
  • 2 tablespoons prepared pesto
  • 12 mini mozzarella balls


  1. Salt the tomato cavities
  2. Place pesto sauce in a medium size bowl.
  3. Add the mozzarella balls a handful at a time and coat them in the pesto.
  4. Fill the tomato cavities with one or two of the mozzarella balls.
  5. Place on serving dish; serve with toothpicks
