Cool Summer Salmon Salad
Cool down on hot summer days with this little effort to make refreshing salmon salad.
Ingredients
- Dressing
- 1/2 cup extra virgin olive oil
- 4 tbsp white balsamic vinegar
- 3 tbsp honey mustard
- 1/4 tsp ground ginger
- 2 tbsp fresh thyme leaves
- Salt to taste
- Salad
- 1lb cooked salmon fillet, cut into pieces
- 1 cup diced zucchini
- 1/2 cup cooked lentils
- 1/2 cup diced pickles or chopped pickled red onions
- 1/2 cup sliced olives
- 1 tbsp fresh thyme leaves
- 1/2 cup cut in half cherry tomatoes
Directions
- Place all dressing ingredients in a jar and shake until well combined; set aside.
- Place the salmon, zucchini, lentils, pickles or onions, olives, thyme and tomatoes in a salad bowl. Pour the dressing over the salad and toss gently to combine. Correct seasoning with salt to taste. Serve room temperature.
