Cool Summer Salmon Salad

Cool down on hot summer days with this little effort to make refreshing salmon salad.

Ingredients

  • Dressing
  • 1/2 cup extra virgin olive oil
  • 4 tbsp white balsamic vinegar
  • 3 tbsp honey mustard
  • 1/4 tsp ground ginger
  • 2 tbsp fresh thyme leaves
  • Salt to taste
  • Salad
  • 1lb cooked salmon fillet, cut into pieces
  • 1 cup diced zucchini
  • 1/2 cup cooked lentils
  • 1/2 cup diced pickles or chopped pickled red onions
  • 1/2 cup sliced olives
  • 1 tbsp fresh thyme leaves
  • 1/2 cup cut in half cherry tomatoes

Directions

  1. Place all dressing ingredients in a jar and shake until well combined; set aside.
  2. Place the salmon, zucchini, lentils, pickles or onions, olives, thyme and tomatoes in a salad bowl. Pour the dressing over the salad and toss gently to combine. Correct seasoning with salt to taste. Serve room temperature.
