Figs and Raisin Sauce for Pasta and Codfish
- 4 cups tomato sauce
- 1/2 cup prunes or figs, diced
- 1/2 cup raisins
- 1 onion,minced
- 1 stalk celery, minced
- 8 tablespoons extra virgin olive oil
- Salt to taste
- Chop the onion and celery.
- Heat the oil in a skillet and add the chopped vegetables.
- After a few seconds, add the tomato sauce and cook a few minutes; stir in the figs and raisins and heat well.
- Usually served over cod fish with spaghetti
