medium size zucchini, at least 6 inches long, each cut into ¼-inch lengthwise strips then cut in half crosswise into 3- inch long strips

vegetable oil to fry
Directions
Place the zucchini strips in a colander; sprinkle them with salt and place a weight on top of them (like a can of tomatoes) and let them stand for 30 minutes.
Rinse and dry the strips.
Using two strips, make a sandwich with some of the cheese between the slices.
Dip the sandwich in flour on both sides; then in beaten egg to and coat them on both sides in the breadcrumbs. Set aside.
Heat 2 cups vegetable oil in a heavy-duty not too deep pan or pot to 375°F.
Fry the sandwiches a few at a time until golden brown on both sides.
Drain on absorbent paper. Sprinkle with coarse salt. Serve hot.
