Fried Zucchini Sandwiches

Ingredients

  • 4 medium size zucchini, at least 6 inches long, each cut into ¼-inch lengthwise strips then cut in half crosswise into 3- inch long strips
  • salt
  • 2 cups grated Swiss cheese
  • 1 cup flour
  • 2 eggs
  • 1 1/2 cups Panko breadcrumbs
  • coarse salt
  • vegetable oil to fry

Directions

  1. Place the zucchini strips in a colander; sprinkle them with salt and place a weight on top of them (like a can of tomatoes) and let them stand for 30 minutes.
  2. Rinse and dry the strips.
  3. Using two strips, make a sandwich with some of the cheese between the slices.
  4. Dip the sandwich in flour on both sides; then in beaten egg to and coat them on both sides in the breadcrumbs. Set aside.
  5. Heat 2 cups vegetable oil in a heavy-duty not too deep pan or pot to 375°F.
  6. Fry the sandwiches a few at a time until golden brown on both sides.
  7. Drain on absorbent paper. Sprinkle with coarse salt. Serve hot.
