Healthy Salmon Supper
If you love salmon, this dish is for you! A combination of flavors makes for surprising textures and taste. This all came together with steamed asparagus spears, a few Brussels sprouts, some red onions and mashed sweet potatoes flavored with lemon and honey. The sauce? Lemon and butter!
Ingredients
- 2 tbsp Old Bay Seasoning
- 2 6oz salmon fillets
- 2 tbsp avocado or other oil
- 1 cup chopped red onion
- 6 Brussels sprouts cut in half
- 1 large cooked sweet potato, mashed potatoes
- 1 1/2 tbsp honey
- 5 tbsp butter, melted
- 8 steamed asparagus spears
- 1 tbsp fresh lemon juice
- Salt and pepper to taste
Directions
- Spread the Old Bay Seasoning on a dish or plastic food tray and rub it all over the salmon; set aside.
- In an ovenproof skillet or Dutch oven type casserole dish, heat the oil; add the onion cook until it softens.Add the Brussels Sprouts and cook covered for 3 to 4 minutes over medium heat. Transfer the mixture to a bowl and set aside. Raise heat to medium high and add the salmon fillets; cook 3 minutes, turning once. Return the onion mixture to the pan. Cover and place in a preheated 400F oven for 10 minutes or until the salmon registers 145F on an instant read thermometer. While salmon cooks, mix potatoes with 1 tablespoon of the butter and the honey. Salt to taste. Keep warm.
- To plate Divide and smear the potatoes on each of 2 dinner plates. Top each with half of the asparagus spears. Place the salmon fillets over the asparagus. Divide and scatter the onion mixture over the salmon. Combine the remaining 4 tablespoons melted butter with the lemon juice and pour over each plate. Serve immediately and add salt and pepper taste.
