Heartbeat Salad
Have a go at making this delicious beet, red plum and buffalo mozzarella salad. It is so heart healthy and teams so well with mild tasting buffalo mozzarella cheese.
Ingredients
- 2 cups thin sliced cooked beets
- 1 cup sliced red plums
- 5oz buffalo or regular mozzarella, cut into bite-sized pieces
- 1/4 cup diced pickled red onions (optional)
- 2 tbsp diced chopped parsley
- 3 tbsp extra virgin olive oil
- 2 tbsp white balsamic vinegar
- 1 tbsp honey
- Salt to taste
Directions
- Place beets, plums, cheese, onions and parsley in a salad bowl. In a small bowl, whisk together the olive oil, vinegar and honey, add salt to taste. Drizzle over the salad ingredients and toss gently.
