Italian Chicken Salad


  • 4 cups shredded or diced cooked chicken
  • 2 ribs celery, diced
  • 2 scallions, diced
  • 4 tbsp avocado or extra virgin olive oil
  • 3 tbsp fresh squeezed lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp fresh thyme leaves
  • 4 leaves fresh basil, chopped
  • 1 cup quartered cocktail cherry tomatoes
  • salt and pepper to taste


  1. In a bowl combine the chicken, celery and scallions and toss well. In a separate bowl whisk together, the oil, lemon juice and mustard and pour over the chicken mixture.
  2. Toss to combine.
  3. Stir in the thyme and basil and toss. Add the avocado and tomatoes and gently toss. Add salt and pepper to taste.
