Just Peachy Pizza Pie

A pizza is not just a pizza when it can become a delicious sweet peachy pie!

Ingredients

  • 9–10-inch cake pan, greased with melted butter or olive oil and lined with parchment paper
  • 3 large large peaches, yellow, white or combination, peeled and thinly sliced
  • Juice one lemon
  • 1 package pizza dough, at room temperature or one recipe homemade dough
  • 3/4 cup well drained whole milk ricotta cheese
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp coarse sugar

Directions

  1. Place the sliced peaches in a rectangular casserole or other dish and toss them with the lemon juice. Set aside
  2. On a lightly floured surface, stretch out the dough and place it in the prepared pan.
  3. In a bowl combine the ricotta cheese, salt and sugar and spread it evenly over the top of the pizza dough.
  4. Drain the peach slices and place them over the ricotta cheese filling it in completely.
  5. Preheat oven to 375F
  6. Mix the cinnamon and sugar together and sprinkle it evenly over the peaches. Let rise for 20 minutes, covered.
  7. Bake for 30 to 35 minutes or until firm to the touch. Let cool on wire rack until warm. Cut into wedges and serve.
