Lemon Curd Sundae

Ingredients

  • 1 1/2 cups prepared lemon or lime curd
  • 1 cup raspberries or blueberries
  • 1 cup peeled and diced mango
  • 1 cup crushed small amaretti cookies
  • 1 cup cold whipping cream
  • 1 tbsp cornstarch
  • 2 tbsp Confectioner's sugar

Directions

  1. In a bowl combine the curd with the raspberries and mango. Set aside.
  2. In a separate bowl, whip the cream with the cornstarch and Confectioner’s sugar. Set aside.
  3. Using 4 glasses or goblets, divide and make layers in each glass with some of the curd, some of the crushed cookies, the whipped cream and continue making layers filling the glasses or goblets.
  4. Refrigerate until ready to serve.
