Lemony Chicken Meatballs with Spinach and Orzo
Lemony chicken meatballs are just the right and light taste to welcome spring.
Ingredients
- Meatball ingredients:
- 1lb ground chicken
- 1 large egg
- 1/2 cup breadcrumbs soaked in ½ cup milk for 5 minutes
- 1/4 cup grated Parmigiano Reggiano cheese
- 1 large lemon (zest)
- 1 tbsp salt
- grinding black pepper
- 1 tsp ground nutmeg
- 2 tbsp finely chopped parsley
- 2 garlic cloves, finely minced
- 1 cup shredded zucchini
- Spinach and Orzo Ingredients:
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 cups chopped fresh spinach
- 2 cups cooked orzo or barley
- salt to taste
- 1 large lemon (juice)
- melted butter
Directions
- Meatballs: Combine all the meatball ingredients in a bowl and form into 8 meatballs. Place them in a buttered casserole dish and bake for 20-25 minute at 350F or until internal temperature of 165F is reached.
- Spinach and Orzo: Heat the olive oil in a saute pan; add the garlic and cook slowly until it softens. Stir in the spinach, allowing it to wilt. Mix in the orzo, salt and pepper to taste and lemon juice
- To serve: Plate the spinach mixture on individual plates and top with one or two meatballs. Drizzle some hot butter over the top
