Mashed Potato Bread

Got leftover mashed potatoes? They are perfect for making moist and delicious potato bread.

Ingredients

  • 1/4 cup warm water
  • 1 tbsp active dry yeast
  • 1 cup mashed potatoes at room temperature
  • 1/2 cup warm milk
  • 2 eggs
  • 1/2 cup butter, melted and cooled
  • 1 1/4 tsp salt
  • 4 1/2 to 5 flour

Directions

  1. Pour water into a large bowl or stand mixer. Stir in yeast and allow to stand for 5 minutes.
  2. In a separate, bowl combine the potatoes with milk until smooth; beat in the eggs. Add the cooled butter and salt and combine well. Add to the yeast mixture.
  3. Begin adding flour 1 cup at a time until a soft but not sticky dough forms. Knead the dough on a floured surface until smooth and place in buttered bowl.
  4. Cover and let rise until double in size, about 2 hours. Punch dough down and divide into 2 equal rounds. Knead and shape into two rounds. Cover and let rise 30 minutes.
  5. Preheat over to 375F
  6. Place each round on a parchment lined bake sheet and bake until nicely browned about 35 minutes. Cool on wire rack.
