Mediterranean Salad
Eating healthy does not have to be dull and now that warmer weather is here, keep it cool in the kitchen with this light and nutritious Mediterranean salad. This one mingles flavors of avocado, pickled red onions, meaty olives, fresh and sun dried tomatoes, cherry tomatoes and feta cheese for an explosion of flavor in every forkful.
Ingredients
- 2 tbsp fresh lemon juice
- 1 avocado, peeled and cut into 1/4 inch thick slices
- 6 large cherry tomatoes cut into wedges
- 4 sun dried tomatoes in olive oil, cut into pieces
- 6 to 8 black pitted Sicilian olives or olives of your choice
- 1/4 cup chopped pickled red onion
- 1 small block feta cheese, cut into chunks
- 3 tbsp extra virgin olive oil
- 1/4 tsp salt
- 1/4 tsp dried oregano
- grinding coarse black pepper
Directions
- Pour lemon juice into a medium size salad bowl. Add the avocado slices and toss gently. Add the fresh and dried tomatoes, olives, pickled onion and feta cheese and toss everything gently. In a separate small bowl, whisk together the olive oil, salt, oregano and black pepper. Pour over the salad ingredients and toss to combine. Let stand about 30 minutes before serving to allow flavors to mingle.Serve with crusty bread.
