Mock Waldorf Salad


  • Serves 2
  • 1 apple, diced
  • 1 pear diced
  • ½ cup dried raisins or cranberries or dried figs
  • ½ cup chopped nuts
  • 1 tablespoon lemon or orange juice
  • 1 cup ricotta cheese or one 5.3 oz. plain yogurt
  • 4 tablespoons honey
  • salt to taste


  1. Add the apple, pear, raisins, nuts and lemon juice to a bowl and toss well.
  2. Add the ricotta cheese or yogurt, honey and salt and combine well,
  3. Serve over lettuce or radicchio leaves or just plain.
