Mock Waldorf Salad
- Serves 2
- 1 apple, diced
- 1 pear diced
- ½ cup dried raisins or cranberries or dried figs
- ½ cup chopped nuts
- 1 tablespoon lemon or orange juice
- 1 cup ricotta cheese or one 5.3 oz. plain yogurt
- 4 tablespoons honey
- salt to taste
- Add the apple, pear, raisins, nuts and lemon juice to a bowl and toss well.
- Add the ricotta cheese or yogurt, honey and salt and combine well,
- Serve over lettuce or radicchio leaves or just plain.
