Moist Italian Stye Meatloaf

Ingredients

  • 1lb ground beef, pork or combination
  • 1 large egg
  • 1/2 cup ketchup
  • 1 cup chopped cooked onions
  • 1/2 cup breadcrumbs
  • 1 cup cooked chickpeas or rice
  • 2 cups shredded zucchini
  • salt and pepper to taste
  • Chopped mozzarella cheese for topping

Directions

  1. In a bowl, mix everything together except the mozzarella cheese.
  2. Free form into a loaf or use loaf pan(s) lined with aluminum foil.
  3. Bake at 350F until internal temperature reaches 165F.
  4. Sprinkle cheese on top of meatloaf 5 minutes before meatloaf is cooked.
  5. Cool slightly for even slicing.
