Pasta with Lobster

Fish and seafood can be really expensive. If you are a lobster lover though, prices are at their best now. For this dish, a half pound of cooked lobster goes a long way. Try it with clams, scallops or mussels too!

Ingredients

  • 8oz cooked linguine or spaghetti
  • 2tbsp olive oil
  • 1 onion, finely chopped
  • 2 large cloves garlic, minced
  • 1/2tsp red pepper flakes
  • 2 cups chopped spinach, baby boy choy or Swiss chard
  • 1 cup cut in half cherry tomatoes
  • 1 cup fresh or frozen peas
  • 1/2lb cooked lobster meat cut into small pieces
  • 2tbsp fresh lemon juice
  • salt and pepper to taste

Directions

  1. Heat olive oil in a saute pan and cook the onion until it softens.
  2. Stir in the garlic and red pepper flakes and cook for a couple of minutes over medium heat. Add the spinach and cook down about 2 minutes.
  3. Add tomatoes and peas and cook a couple of minutes or until tomatoes begin to collapse.
  4. Lover heat and add lobster and cook just until heated through. Stir in lemon juice, salt and pepper.
  5. Add the linguine and toss to combine well.
  6. Serve hot with additional olive oil to drizzle over the top.
