Pasta with Lobster
Fish and seafood can be really expensive. If you are a lobster lover though, prices are at their best now. For this dish, a half pound of cooked lobster goes a long way. Try it with clams, scallops or mussels too!
Ingredients
- 8oz cooked linguine or spaghetti
- 2tbsp olive oil
- 1 onion, finely chopped
- 2 large cloves garlic, minced
- 1/2tsp red pepper flakes
- 2 cups chopped spinach, baby boy choy or Swiss chard
- 1 cup cut in half cherry tomatoes
- 1 cup fresh or frozen peas
- 1/2lb cooked lobster meat cut into small pieces
- 2tbsp fresh lemon juice
- salt and pepper to taste
Directions
- Heat olive oil in a saute pan and cook the onion until it softens.
- Stir in the garlic and red pepper flakes and cook for a couple of minutes over medium heat. Add the spinach and cook down about 2 minutes.
- Add tomatoes and peas and cook a couple of minutes or until tomatoes begin to collapse.
- Lover heat and add lobster and cook just until heated through. Stir in lemon juice, salt and pepper.
- Add the linguine and toss to combine well.
- Serve hot with additional olive oil to drizzle over the top.
