Poached Pears
How about a simple autumn dessert that would be lovely for Thanksgiving? These spiced poached pears simmer in apple cider with cinnamon, cloves, a little brown sugar, and lemon juice until tender.
Reduce that fragrant cider mixture, spoon it over the pears, and finish with chopped candied ginger. My little touch: peel alternating strips of skin before cooking to give the pears a pretty striped look.
Use Anjou or Bartlett pears, and if you want to gussy them up a little, add some whipped cream. A beautiful way to enjoy the flavors of fall!
Ingredients
- 2 large ripe pears, cut in half lengthwise and core removed
- 2 cups apple cider
- 2tbsp lemon juice
- 1/4 cup light brown sugar
- 1 whole cinnamon stick
- 1/4 tsp ground cloves
Directions
- Combine the cider, lemon juice, sugar, cinnamon stick and cloves.
- In a saucepan large enough to hold the cut pear halves in a single layer.
- Add the pears cut side down in the liquid; bring the cider to a simmer. Cover and cook until a knife is easily inserted into the pears.
- Remove the pears with a slotted spoon to a plate.
- Raise the heat to medium and reduce the liquid until it thickens slightly.
- Cool then pour over pears. Serve at room temperature.
