Pork Tenderloin on Focaccia Bread

Right now pork prices are very reasonable, and pork tenderloin is a no fail choice; it is tender and cooks up fast. Shredded or thinly sliced, it makes a great sandwich.

Ingredients

  • 1 1/4lbs pork tenderloin
  • 1 1/2tsp salt
  • 1/2 tsp coarse black pepper
  • 1tsp ground fennel seeds
  • 3tbsp olive oil
  • Sauce
  • 1tsp garlic powder
  • 1/2tsp salt
  • 3/4 cup tomato sauce
  • 3tbsp balsamic vinegar
  • 1tbsp fresh grated ginger
  • 2tbsp honey
  • Toppings
  • picked onions
  • arugula or lettuce of your choice
  • sweet pickle slices
  • 8 slices focaccia bread

Directions

  1. Dry the meat rub it all over with the salt and pepper. Heat the olive oil in a saute pan and sear the meat on all sides.
  2. Place the tenderloin on a preheated grill and cook over medium heat until an internal temperature of 155F is reached.
  3. Remove meat from grill and let stand covered for about 10 minutes.
  4. Meanwhile combine all the sauce ingredients in a medium size saucepan and bring to a boil; reduce the heat to simmer and cook for about 5 minutes or until mixture begins to thicken. Set aside.
  5. Shred the meat or slice it into thin rounds and add it to the sauce and stir to combine well.
  6. Layer arugula or lettuce leave on one slice of focaccia bread. Add pork and top with pickled onions and or pickle slices. Top with second slice of focaccia bread.
