Raspberry Delight
Here’s a cool no bake dessert for summer and it only uses three ingredients!
Ingredients
- 1 1/2 cups fresh or frozen raspberries
- 2/3 cup sugar
- 1 1/2 cups heavy whipping cream
Directions
- Line a loaf pan with plastic wrap and allow the excess wrap to overhang the side of the pan Set aside.
- Place raspberries and sugar in a blender or food processor and process until smooth. Transfer to a bowl.
- In a separate bowl beat the cream until thick and fold into the raspberry mixture. Spread evenly in loaf pan. Fold the plastic wrap over the top. Freeze for at least three hours or overnight.
- When ready to serve, unwrap the pan, invert it onto a plate and remove the rest of the plastic wrap. Cut into slices to serve garnished with fresh berries.
