Ricotta, Fig and Prosciutto Pizza

Do you make pizza using store bought dough? Instead of the predictable toppings like cheese and pepperoni why not gourmet-ize that slab of dough with toppings like figs, prosciutto, rosemary and ricotta cheese. Stretch out the dough on a lightly oiled pizza pan and set aside while you make the topping.


  • 1 cup ricotta cheese
  • 1/2 cup grated Parmigiano Reggiano cheese
  • 1/2 tsp salt
  • Good grinding coarse black pepper
  • 2 tbsp fresh rosemary leaves
  • 3 to 4 fresh figs cut into slices
  • 4 to 6 slices prosciutto, chopped
  • Extra Virgin olive oil for drizzling on top


  1. Preheat the oven to 375F In a small bowl combine the ricotta and grated cheese, salt and pepper. Spread thinly over the pizza dough Add the rosemary, figs and prosciutto over the cheese mixture. Cover and allow to rise for 30 minutes, Bake for 30-35 minutes or until the crust is nicely browned. Cut into pieces and drizzle top with extra virgin olive oil
