Sage Pie

Creamy, crust-less and with a hint of the forest, this delightful baked and rich tasting sage pie is the perfect lunch with a tossed salad.

Serves 4

Ingredients

  • 6 large eggs
  • 1 tablespoon flour
  • 5 sage leaves, finely minced
  • 2 tablespoons milk or cream
  • 1/2 cup grated Asiago or Swiss cheese
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350°F.
  2. Place a 9 inch pie plate in the oven.
  3. In a bowl beat the eggs and flour with a whisk. Blend in the sage leaves, milk, salt, pepper and cheese.
  4. Swirl the butter in the heated pie plate until melted. Pour the egg mixture into the plate and bake until the eggs are set but still soft in the center, about 20 minutes. Cut into wedges to serve.

I saw this episode and decided to research sage pie for making myself. If I’m not mistaken, the accompanying photo above is not sage pie but, rather, a potato pie made during the same episode. The sage pie was made in a blue pie plate. Not important but if anyone is interested in this dish, they should be able to see that the actual sage pie has a discernable crust. Enjoy Mary Ann and the show greatly!

Mr Bennett: I believe you’re mistaken. I saw the episode today and, yes, the sage pie is baked in a blue pie pan and the above picture shows a blue pie pan. There is no crust on the sage pie. The photo looks EXACTLY like the finished product on the show. I hope you tried the recipe.
