Salmoriglio Sauce e Carpaccio di Salmone / Sicilian Lemon Sauce for Salmon
Used by Sicilians and Calabrians for fish, this delicious and easy to make no cook sauce is also great on bruschetta, pizza and pasta
Ingredients
- 1/2 cup extra virgin olive oil
- 1/4 cup lemon juice
- 6 tbsp parsley
- 2 cloves garlic, minced
- 1 tbsp dried oregano
- salt & pepper to taste
Directions
- Combine all the ingredients in a jar and refrigerate for up to 1 month.
- When ready to use on carpaccio di salmone, slice the boneless salmon into thin slices and place them slightly overlapping on a serving platter. Spoon the sauce over the fish and allow it to sit for at least 30 minutes at room temperature before serving.
- Garnish the plate with lemon wedges.
