Shrimp Cocktail
Say shrimp and it sounds expensive, but seafood and fish ARE expensive but a little goes a long way. A half pound of medium size shrimp count is between 20 to 25; what can you do with that?
Ingredients
- 1/2 lb medium shell on raw shrimp
- 1 cup finely chopped lettuce
- 1/2 cup diced mango
- 1/2 cup cut in half cherry tomatoes
- shredded radicchio leaves
- Sauce
- 4 tbsp extra virgin olive oil
- 1 tsp dry mustard
- 1/4 tsp salt
- 1 tbsp honey
- 3 tbsp sweet pickle juice or white balsamic vinegar
- 2 tbsp tomato paste
- salt and pepper to taste
Directions
- Bring a medium size pot of water to a boil; add 1 tablespoon salt and the shrimp. Boil 2 minutes. Shells should turn pink. Turn off heat and allow shrimp to steep in the water for 3 minutes. Drain and cool shrimp. Remove shells and devein. Set aside.
- Combine all the sauce ingredients in a small bowl and whisk to combine well.
- In each of 4 individual serving bowls, divide and add the lettuce. Place 5 shrimp in each bowl on top of the lettuce. Divide and add the mango, cherry tomatoes and radicchio to each bowl. Drizzle the sauce over the tops of each bowl and serve.
