Sicilian Style Potato Salad

Fresh, vibrant, and straight from Sicily, this potato salad skips the mayo and layers Yukon gold potatoes with olives, capers, oregano, and extra virgin olive oil for the perfect Mediterranean side dish. Simple ingredients, bold flavor, and made for summer tables.

Ingredients

  • Dressing
  • 2 tbsp roasted garlic (see recipe in directions)
  • 1/2 tsp salt
  • 5 tbsp extra virgin olive oil
  • 2 tbsp white balsamic vinegar
  • Salad
  • 4 cups peeled, cooked, and cubed Yukon Gold potatoes
  • 1 cup pickled red onions
  • 1/2 cup sliced green olives
  • 2 tbsp capers
  • handful fresh mint leaves
  • 2 tbsp fresh or dried oregano
  • 1 to 2 tbsp fresh lemon juice

Directions

  1. In a small bowl whisk together the dressing. Set aside.
  2. In a separate bowl combine the potatoes, onions, olives and capers.
  3. Add the dressing and gently toss the ingredients.
  4. Add the mint, oregano and lemon juice and toss again.
  5. Cover and let stand at room temperature at least an hour before serving.
