Southern Italian Style Zucchini and Potatoes with Vinegar

Ingredients
3 tbsp
olive oil
1 small
onion, minced
2 cloves
garlic, minced
1/4 tsp
dried red pepper flakes
1 medium
zucchini, quartered
1
Yukon Gold potato, peeled and quartered
2 tbsp
red or white win vinegar
Salt and pepper to taste
Directions
Pour the oil into a saute pan and over medium heat add the onion and garlic and cook gently until the garlic begins to brown; add the pepper flakes and the zucchini and potatoes and cook stirring often until the vegetables are cooked, about 8 minutes.
Stir in the vinegar and let it evaporate. Add salt and pepper to taste.
