Southern Italian Style Zucchini and Potatoes with Vinegar

Ingredients

  • 3 tbsp olive oil
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1/4 tsp dried red pepper flakes
  • 1 medium zucchini, quartered
  • 1 Yukon Gold potato, peeled and quartered
  • 2 tbsp red or white win vinegar
  • Salt and pepper to taste

Directions

  1. Pour the oil into a saute pan and over medium heat add the onion and garlic and cook gently until the garlic begins to brown; add the pepper flakes and the zucchini and potatoes and cook stirring often until the vegetables are cooked, about 8 minutes.
  2. Stir in the vinegar and let it evaporate. Add salt and pepper to taste.
  3. Serve hot.
