Stuffed Peppers with Chili Oil

Ingredients

  • 4 large peppers, hollowed out, stem tops reserved
  • 3/4 lb Italian pork sausages (2 to 3), casing removed, meat crumbled
  • 1 onion minced
  • 1/2 cup cooked rice
  • 2 tbsp minced parsley
  • 1 cup 1 cup chopped cheese such as mozzarella, provolone, asiago
  • Salt and pepper to taste
  • 1 cup chicken broth
  • Dell ‘Orto extra virgin chili pepper olive oil

Directions

  1. Preheat oven to 350F
  2. In a bowl combine the sausage, onion, rice, parsley, cheese, salt and pepper. Divide and stuff the mixture into the peppers.
  3. Replace the tops. Place peppers in a casserole dish or Dutch oven and pour the broth into the pan. Cover and bake for 30-35 minutes or until the peppers are soft.
  4. Serve with a drizzle of Dell ‘Orto extra virgin chili pepper olive oil over the peppers.
