Summer Arugula Salad

Arugula (also called rugula and rocket) is not a lettuce but is part of the broccoli family of vegetables and  has become popular as a salad green. It’s spiciness, with a hint of mustard, is part of its charm and it’s great mixed with lettuces but is also tasty paired with burrata, a creamy cow’s milk cheese similar to mozzarella and fruit like peaches or nectarines for a taste of summer. Let your culinary curiosity run wild and add some dried fruit like cranberries and a few nuts.

Ingredients

  • 2 cups arugula leaves, washed and spun dry
  • 1 tbsp extra virgin olive oil
  • 2 tsp white balsamic vinegar
  • 1 tsp honey
  • salt to taste
  • 1 large nectarine or peach cut into sections
  • 2 tbsp dried cranberries or raisins
  • 1/4 cup almonds
  • 1 ball burrata cheese cut in half
  • grinding black pepper

Directions

  1. Place arugula in a bowl. In a separarte bowl, whisk together the the oil, vinegar, honey, and salt and pour over arugula; toss well. Add fruit, cranberries and almonds and toss well.Divide and place on each of 2 salad plates. Top each salad with a burrata cheese half side down. Grind black pepper over top of cheese and give it a drizzle of extra virgin olive oil. Serve immediately
