Summer Shrimp and Pasta Salad

Shrimp and pasta make a great combo for this cool summer salad.

Ingredients

  • Salad
  • 4 cups cooked short cut pasta like elbows, fusilli or penne
  • 1/2lb cooked medium shrimp (16-25)
  • 1 cup diced carrot
  • 1/2 cup diced celery
  • 1/2 cup sliced olives
  • 1 cup cut in half cherry tomatoes
  • 1 cup torn into pieces arugula
  • 1/2 cup fresh peas
  • 1 cup diced spring onions
  • Dressing
  • 1/3 cup extra virgin olive oil
  • 1/4 cup sweet pickle juice
  • 2tbsp sweet mustard
  • 2tbsp honey
  • 1/2 cup mayonaise
  • 1tsp lemon pepper
  • salt to taste

Directions

  1. In a large bowl toss all the salad ingredients together. Set aside.
  2. In a separate bowl, whisk together all the dressing ingredients until smooth. Correct salt if necessary.
  3. Pour the dressing over the salad and toss well.
  4. Let stand for 30 minutes at room temperature before serving.
