Summer Shrimp and Pasta Salad
Shrimp and pasta make a great combo for this cool summer salad.
Ingredients
- Salad
- 4 cups cooked short cut pasta like elbows, fusilli or penne
- 1/2lb cooked medium shrimp (16-25)
- 1 cup diced carrot
- 1/2 cup diced celery
- 1/2 cup sliced olives
- 1 cup cut in half cherry tomatoes
- 1 cup torn into pieces arugula
- 1/2 cup fresh peas
- 1 cup diced spring onions
- Dressing
- 1/3 cup extra virgin olive oil
- 1/4 cup sweet pickle juice
- 2tbsp sweet mustard
- 2tbsp honey
- 1/2 cup mayonaise
- 1tsp lemon pepper
- salt to taste
Directions
- In a large bowl toss all the salad ingredients together. Set aside.
- In a separate bowl, whisk together all the dressing ingredients until smooth. Correct salt if necessary.
- Pour the dressing over the salad and toss well.
- Let stand for 30 minutes at room temperature before serving.
