That’s Amore Valentines Day Cookies

I guess you could say that Italy epitomizes Valentines Day where amore is constantly on view. Surprise your sweetie and bake some Valentines Day Cookies.

Ingredients

  • 1 stick butter softened
  • 4 oz mascarpone or cream cheese, at room temperature
  • 1 1/3 cups sugar
  • 1 large egg
  • 1 tsp pure almond extract
  • 2 3/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder

Directions

  1. In a stand mixer, beat the butter, mascarpone or cream cheese with the sugar until the mixture is smooth and creamy looking. Beat in the egg on medium speed until well blended and add the almond extract.
  2. In a bowl, sift together the flour, salt and baking powder. On medium speed, add the flour mixture in three parts to the butter mixture and mix until a ball of dough forms. Gather up the dough and wrap it in wax paper and refrigerate it for at least 1 hour. When ready to use, roll the dough out on a lightly floured surface to 1/4-inch thickness and use a 3-inch heart cookie cutter to cut shapes. Place the cookies on parchment paper lined cookie trays, spacing them about 1-inch apart.
  3. Preheat oven to 325F and bake two trays at a time for about 12 minutes or until the edges just begin to look golden brown. Remove from oven; let cookies cool completely before frosting them with your favorite frosting.
