Torta Sette Vasetti / Seven Jar Cake

Called torta sette vasetti (seven-jar cake), this super-moist, fun-to-make cake uses a single-serving yogurt cup 7 times to measure the main ingredients.

Loved by Italians to go with caffe’ or have as an afternoon merenda (snack).

Ingredients

  • 1 5.3-to-6-ounce container of plain yogurt
  • 1 container avocado oil or olive oil
  • 3 large eggs at room temperature
  • 2 containers of granulated sugar
  • 3 containers of all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tbs pure vanilla extract

Directions

  1. Preheat the oven to 350 degrees F. Butter a 9-inch cake pan and line with parchment paper, and then butter the parchment paper
  2. Scoop the yogurt into a bowl, fill the container with the oil and add it to the yogurt and mix well.
  3. Add the eggs one at a time beating well.
  4. Rinse and dry the yogurt container and fill with the sugar and stir it into the egg mixture.
  5. Measure the flour into the yogurt container and place in a separate bowl; stir in the baking powder and salt and mix well.
  6. Stir the dry ingredients into the egg mixture, combining well, and then stir in the vanilla.
  7. Scrape the ingredients into the pan and level the top with a spatula.
  8. Bake until a cake skewer comes out clean or an instant read thermometer registers 205 degrees in the center of the cake.
  9. Serve plain dusted with confectioners’ sugar or frosted. Serve with your favorite fruit such as fresh strawberries or peaches.
